Two (actually three) great lasagna recipes

Last night, we went to our niece Jessie’s 6th birthday party, and my sister-in-law Leslie made two fabulous lasagna recipes. (It’s possible that my perspective is a bit skewed at the moment because I’ve been eating mostly Chex Party Mix and Christmas cookies for the month of December.) I love lasagna, but I find that [...]

A couple of relatively unhealthy (but good!) chicken recipes

1. From the White Trash Cookbook (and you know that I mean that in the most positive way possible): Potato Chip Chicken – mayonnaise, cream of chicken soup and potato chips. ½ pint sour cream
3-4 Tbsp. mayonnaise
½ tsp. Old Bay seasoning
3 shakes garlic powder
2-3 shakes Worcestershire sauce
Juice of ½ lemon
½ tsp. dry mustard

OMG – What can I make for dinner?

One of my on-going struggles is around how to prepare healthy meals that my family will eat, when I get home at 6:00 or later.  I have the best intentions, but there are so many days when I walk in the door and I just don’t feel like spending the next 45 minutes preparing dinner.  [...]
