1. From the White Trash Cookbook (and you know that I mean that in the most positive way possible): Potato Chip Chicken – mayonnaise, cream of chicken soup and potato chips. FYI – to make this dish a wee bit healthier, I added a bag of frozen broccoli (microwaved for three minutes), and I used half the amount of mayonnaise, and double the amount of chicken.
2. Another favorite that my mom used to make (and no, I won’t be posting the chicken-and-waffles recipe – another of my mom’s stand-bys – because it’s repulsive): Pepperidge Farm Chicken – Line a rectangular pan with aluminum foil. Place 4-6 chicken breasts on the foil. Dot chicken breasts with butter and place a slice of swiss cheese on top of each chicken breast. In a separate bowl, mix 2 cups Pepperidge Farm stuffing with a can of Campbells Healthy Request cream of mushroom soup and a can of (sam brand) cream of chicken soup (or you can use cream of celery), and a bit of water. Pour on top of the chicken. Bake at 350 for 40 minutes or so until it’s done. Serve with creamed corn (just kidding. You probably want to serve it with a more healthy vegetable.)
